Love these fruity scones: half the fat and calories of cream-filled ones

225g self raising flour
1tbsp golden caster sugar
70g dried unsweetened cherries
90ml skimmed milk
1 egg beaten
3tbsp 100% fruit cherry jam
100ml 3% fat crème fraîche
1. Heat the oven to 200F°C/400°C/gas mark 6. In a bowl rub together the flour and butter until it looks like bread crumbs. Stir in the sugar and cherries.
2. In a separate bowl, mix together the milk and egg. Make a well in the centre of the dry ingredients and pour in the egg mixture. With a knife, stir and combine the mixture until it starts to come together, then using your hands gently knead it into a soft ball of dough.
3. On a floured surface, roll or press the dough to 4cm thick. Then, using a 5cm cutter, cut out small scones and lay them on a floured baking sheet. Bake for 12 to 15 minutes until the tops are just golden and they sound hollow when tapped on the bottom. Cool on a wire rack.
4. Serve warm or cold, spread with crème fraîche and jam.
