Define muscle while upping your protein intake to stay in shape this winter. Make Amanda Hamilton's favourite recipe with quinoa
'If do eat quinoa plain it can taste a bit bland but it absorbs flavours well. The key is adding in lots of herbs and spices. Also, if you leave the quinoa to soak in cold water for five minutes then rinse before cooking it, it tends to cook more evenly,' says TV nutritionist Amanda Hamilton.
40 g feta 1/2 courgette 1 spring onion 10 cherry tomatoes 2 sprigs fresh parsley 35 g quinoa 1/2 red chilli 1/2 tbsp white wine vinegar

Quinoa goes really well in curry. You can cook it into the curry and have it as a one-pot dish instead of as an accompaniment. If you find it a little watery, try draining it in a fine sieve and leaving it to sit for a few minutes.
